How to cook perfect organic roast beef

Our customers often ask us what is the best way to cook the organic meat they have ordered from us. Organic beef and lamb is of course cooked in the same way as ordinary meat, but because it is so tender you can often cook it for less time. Roast organic beef is best served medium-rare, so you can appreciate the delicious flavour. Our Aberdeen Angus cattle graze on clover pastures in Scotland and their meat takes on the flavour of their grazing.

1kg Organic Aberdeen Angus beef feeds 4 people

Spread mustard on top of the organic Aberdeen Angus beef. Roast the organic meat, uncovered, at 200 C for 50 minutes for medium-rare roast beef. Leave the beef to rest for 20 minutes. Whilst the roast beef is resting, stir a little flour into the pan juices, cook, then add red wine, stock and seasoning. Bring to the boil and simmer for 5 mins. This will make the perfect gravy for roast beef.

Roast beef is traditionally served with roast potatoes and yorkshire puddings. Horseradish sauce and mustard are the usual accompaniments to roast beef.

Suggested cuts for Organic Roast Beef

Customers often ask us what cut of Organic Roast Beef to buy. For a special occasion we suggest organic rib of beef on the bone. Cooking organic beef on the bone allows the heat to penetrate the meat more evenly and adds flavour and tenderness to the organic beef. If you prefer to cook meat without a bone order rolled rib of organic beef. Rib of beef comes in 2 or 4 bones, 2 bone is enough for 6 people whereas a 4 bone roast will cater easily for 10-12. This does depend of your appetite of course!

Cook a 2 bone roast for 1 hour in a hot oven, and a 4 bone roast of organic rib of beef for about 1 hour 45 mins.

You could always try Sirloin on the bone or Rolled sirloin

A premier cut of beef and next to the rib anatomically. Leaner than Rib of Beef and so needs more care not to overcook it.

Fillet of beef

The prime cut or organic beef from the carcase. This is reflected in the price. You can roast fillet but it doesn't have the fat covering of sirloin or rib to protect it and can be over cooked. Best used for rare steak and carpaccio.
